Raspberry Chocolate Chip Muffins

I was having trouble with the lighting in my house, so I decided to go outside for this picture. I'm convinced that I was getting strange looks from the people passing by. They all seemed to be staring at the plate of muffins, the camera, the weird-lookin' girl trying to photograph them in front of some dead flowers, and the dog trying to get at the muffins (my dog was on a leash, so he fortunately never did get at them). Anyways, they were really good! I would definitely make them again!!


Ingredients:
  • 1-2/3 cups all-purpose flour
  • 3/4 cup quick-cooking oats
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1 egg, lightly beaten
  • 3/4 cup fat-free milk
  • 1/3 cup canola oil
  • 2 tablespoons orange juice
  • 1 teaspoon Spice Islands® pure vanilla extract
  • 3/4 cup fresh or frozen unsweetened raspberries
  • 1/2 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, combine the first six ingredients. Combine the egg, milk, oil, orange juice and vanilla; stir into dry ingredients just until moistened. Fold in raspberries and chocolate chips.
  • Fill paper-lined muffin cups or cups coated with cooking spray two-thirds full. Bake at 375° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Waffles

Sorry things have been so slow around here. I've been too busy to bake. :) Anyways, here's a recipes for waffles. I haven't had them for so long, since our waffle iron broke. Tonight was the first night in a long time! :)


Ingredients:

2 cups flour
2 tablespoons sugar
1 teaspoons salt
3 teaspoons baking powder
2 eggs, separated
1/4 cup melted shortening or oil
1 3/4 cups milk

Sift together first four ingredients. Set aside.

Beat egg whites until stiff, then beat yolks separately.

Combine shortening/oil and milk with egg yolks, and then stir into dry ingredients.

Fold in stiffly beaten egg whites last. Bake in hot waffle iron until lightly browned.

Yield: 10 to 12 waffles

French Toast



Me and my best friend made this for breakfast about a week or so ago. It was VERY, VERY, VERY GOOD!!! I highly recommend it!

Ingredients:

- 5 eggs
- 2 1/2 cups of milk
- cinnamon
- 1 loaf of toast bread

Method

In a medium sized flat bottomed bowl, whisk the egg and milk together.
Add the cimmamon and combine.
Heat a non stick fry pan to medium and melt a teaspoon of butter, spreading around the pan.
Soak each slice of bread and lay into the fry pan .. turn once when bottom has browned. Keep french toast warm in the oven until ready to serve. Sprinkle with powdered sugar to serve.

Pumpkin Muffins



I love muffins and anything with pumpkin! So the combination of the two makes one very, very good recipe! I enjoy making muffins for lunch, they are such a treat! So if you're looking for a good muffin recipe, stop right here and start baking!
Ingredients:

4 eggs
1 1/2 cups sugar
1 cup oil
2 cups pureed pumpkin
3 cups flour
1 Tbsp cinnamon
2 tbsp baking powder
1 tsp salt
2 tsp baking soda
2 cups raisins
For topping: brown sugar and pecan bits

Mix wet ingredients, then stir in dry ingredients until moistened. Add raisins. Scoop into muffin tins sprayed with Pam. Sprinkle tops with brown sugar and pecan bits.

Bake at 375 for 30 min.

Yields 2 doz

Banana Bran Muffins



I love banana muffins of any kind! These are probably some of the best.


Ingredients:

3 beaten eggs
1 cup brown sugar
1 cup white sugar
1 cup salad oil
1 1/2 cups buttermilk
1 1/2 cups mashed bananas
3 teaspoons baking soda
1 teaspoon vanilla
3 cups natural bran
3 cups flour
3 teaspoons baking powder
1 teaspoon salt

Mix bran, buttermilk, and bananas. Let sit while mixing other ingredients.
Combine eggs, sugar, oil, vanilla, and baking soda, then add bran mixture and the rest of the dry ingredients.
Put in muffin tins. Bake for 15 to 20 minutes at 400.

Banana Chocolate Chip Muffins


You have to try this recipe! It is so good! I have wanted to make chocolate chip bananas muffins and was really excited about trying these, I wasn't disappointed.


1/2 cup butter or margarine, room temp
3/4 cup sugar
2 eggs
1 teaspoon vanilla
3 ripe bananas, mashed
2 cups flour
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup semi sweet chocolate chips

Cream butter and sugar, add eggs, bananas and vanilla, beating each in well. Add combined dry ingredients and choc chips, stir until just moist. Fill prepared muffin tins. Bake at 350F, for 25 min. Yield: 6 jumbo, 12 large or 15 medium

Cranberry Orange Scones


These scones are delicious! When I made them we didn't have any orange zest so I used a few drops of orange essential oil, it worked really well!
I'm planning on making these for a tea party going on next month.


Ingredients for Scones:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1/3 cup butter, chilled
3/4 cup fresh cranberries, coarsely chopped
1 tablespoon finely grated orange peel
1 egg, beaten with a fork
3/4 cup buttermilk

Combine the dry ingredients.
Cut in butter until the mixture resembles course meal.
Mix in the coarsely chopped cranberries and orange zest.
Combine the buttermilk and the egg; add to the dry ingredients and mix until the dough sticks together.
Drop by large spoonfuls onto a parchment lined baking sheet.
Bake at 400F for 15 minutes or until golden.
Cool slightly and then drizzle with glaze.

Ingredients for Glaze:
3/4 cup icing sugar
1 teaspoon orange zest
3 tablespoons orange juice

Combine the ingredients and stir until smooth. Using a spoon, drizzle the icing over the scones.

Pancakes with Vanilla Custard Sauce

I love the custard and rasberry sauce! It's healthier than syrup and sooo much better! I hope you enjoy the recipe as much as I did!


For Pancakes:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons sugar
2 eggs, beaten
1 3/4 cups thick sour milk or buttermilk
1/3 cup oil

Sift together all the dry ingredients into a bowl and mix thoroughly.
Combine the eggs, the milk, and oil, then stir into the dry ingredients only until moistened.
Fry on hot griddle until browned on each side.

For Custard Sauce:
2 cups milk, divided
2 tablespoons flour, rounded
2 tablespoons sugar
1/8 teaspoon vanilla extract or almond extract
2 egg yolks

In a small pot, heat 1 cup milk until it begins to boil (medium heat). While this is happening:
Mix dry ingredients, add just a little of the second cup of milk, blend the egg yolks in well and then the rest of the milk. Just before the milk in the pot begins to boil up, stir in the sauce and stir with whisk until the sauce begins to cook and thicken. Take it off the heat and mix in the vanilla extract.

For Raspberry Sauce:
Boil together 4 cups raspberries and 1 cup water . Add sugar to taste. Simmer until thickened. Pour over pancakes with Custard.

Blueberry Banana Oat Muffins


These muffins are delicous! They are the best muffins EVER!

1 1/4 cups flour (you can use part whole wheat flour if you like)
1 cup oatmeal
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup ripe mashed bananas (approximately one banana)
1/2 cup buttermilk ( I think I used 1 cup by mistake but they still tasted fine)
1/3 cup butter or margarine, melted
1 cup fresh or unthawed frozen blueberries

For topping: Mix together 1/4 cup oatmeal and 1/3 cup brown sugar, 1/4 cup chopped pecans if desired

Combine dry ingredients in mixing bowl. Mix well. Beat together banana, buttermilk, egg, and melted butter until smooth. Add to dry ingredients and stir until just blended. Grease the muffin tins and fill 1/2 full. This is a fairly small recipe. It will make about a dozen muffins. Sprinkle with brown sugar and oatmeal topping. Bake at 375 F for about 20 to 25 minutes.
