Coconut Clouds

Ingredients

  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 1 cup (8 ounces) sour cream
  • 2-3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup flaked coconut, toasted

  • FROSTING:
  • 1/3 cup butter, cubed
  • 3 cups confectioners' sugar
  • 3 tablespoons evaporated milk
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 2 cups flaked coconut, toasted

Directions

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in eggs and extracts. Stir in sour cream. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Fold in coconut.
  • Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 375° for 8-10 minutes or until set. Remove to wire racks to cool.
  • In a small heavy saucepan, cook butter over medium heat for 5-7 minutes or until golden brown. Pour into a small bowl; beat in the confectioners’ sugar, milk and extracts.
  • Frost cookies; dip in coconut. Let stand until completely dry. Store in an airtight container. Yield: about 5-1/2 dozen.

Oatmeal Date Sandwich Cookies



These cookies are a MUST try! They've got COCONUT in them! Who can resist that? Even if you don't like dates, you'll LOVE these cookies!

Ingredients:


1 cup sugar
1/2 cup brown sugar
1 cup butter
2 eggs
2 cups flour
1 1/4 cup oatmeal
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup coconut

Cream together the butter and sugars.
Add the eggs and combine well.
Add all the dry ingredients and mix until combined.
Chill in the refrigerator an hour. (make the date filling while the dough chills)
Roll into small balls and flatten with a glass by about half the thickness.
Bake at 350 F for 10 minutes or until lightly browned.

Date Filling:

Buy a 1 pound package of dates. .the kind that is a rectangular block. They will be found by the raisins in the grocery store.
Chop them up and put them in a small saucepan.
Add 1/2 cup water and bring to a simmer.
Stir occasionally and simmer until the consistency of thick jam.
Let cool.
To sandwich the cookies put a small spoonful of date filling on the underside of one cookie and sandwich with the underside of another cookie. Freeze in a container.

Banana Bran Muffins



I love banana muffins of any kind! These are probably some of the best.


Ingredients:

3 beaten eggs
1 cup brown sugar
1 cup white sugar
1 cup salad oil
1 1/2 cups buttermilk
1 1/2 cups mashed bananas
3 teaspoons baking soda
1 teaspoon vanilla
3 cups natural bran
3 cups flour
3 teaspoons baking powder
1 teaspoon salt

Mix bran, buttermilk, and bananas. Let sit while mixing other ingredients.
Combine eggs, sugar, oil, vanilla, and baking soda, then add bran mixture and the rest of the dry ingredients.
Put in muffin tins. Bake for 15 to 20 minutes at 400.

Banana Chocolate Chip Cookies (right) and Cherry Slice (left)


This is an easy, delicious cookie recipe. The first time me and my sister made it we put in 1 and 1/2 cups of cinnamon and nutmeg, not enough butter, and we made the oven smoke! The only person home was my uncle in the garage. My aunt came home just in time to find the oven smoking!

Ingredients for Banana Chocolate Chip Cookies:
1 1/2 cups flour
1 cup sugar
1/2 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup margarine
1 egg, beaten
1 cup mashed bananas (about 2 medium)
1 3/4 cup quick oatmeal
3/4 cup chocolate chips

Sift together flour, sugar, baking soda, salt, ground cinnamon, and ground nutmeg. Cut in margarine until crumbly. Add egg, bananas, quick oatmeal, and chocolate chips, mixing well. Drop by spoonfuls onto greased baking sheet. Bake at 350 degrees for 8 to 10 minutes.


This recipe is really good. I made it when my friend from Mexico came to visit.

Ingredients for Cherry Slice:
1/2 lb. soft margarine (1 cup)
1 1/2 cups white sugar
1 teaspoon vanilla
1 1/2 teaspoons almond extract
4 large eggs
2 1/2 cups white flour
1 tin cherry pie filling (you can use any other pie filling if you want)

Cream margarine and sugar with an electric beater; add vanilla and almond extract. Beat in eggs, one at a time, beating well after each one. Add flour one cup at a time and beat well after each.
Grease a 10 by 15 by 1 cookie sheet. Spread 2/3 of the batter over the bottom. Then drop pie filling here and there, spread lightly. Then drop the rest of the batter in by spoonfuls and just spread it very lightly. Bake at 350 F for 25 to 40 minutes until golden brown. You can drizzle on a thin icing over the cherry slice while still warm. This recipe is very good warm, but I prefer it cold.

Rhubarb Pie


Ingredients:

Filling: (enough for one pie)
4 cups Rhubarb, cut into 1/2 inch pieces
2 cups sugar
2 tablespoons flour
1/4 teaspoon salt
3 eggs
2 tablespoons butter

For pie crust:
Your favourite pie crust recipe

Crumb topping: (enough for one pie)
3/4 cup quick oatmeal
1/2 cup brown sugar
1/2 cup flour
1/4 cup margarine

For filling, stir together sugar, flour, salt, and slightly beaten eggs. Add Rhubarb.
To make pie, roll out pie crust dough on lightly floured surface. With floured rolling pin, roll dough outward from center until dough is a circle one inch larger than pie plate. Transfer dough into pie plate without stretching and evenly trim around plate, or decorate edges however you want. Pour filling into pie crust.
For crumbs, mix until crumbly and sprinkle on top of the pie. Put the pie in the oven and bake at 425 for 10 minutes, then turn heat down to 350. Continue baking for 30 to 40 minutes , or until brown.
Freeze other half of pie crust for future use.

Snickerdoodle Cookies



Ingredients:
1\2 cup butter, softened
1 cup sugar
1\4 teaspoon baking soda
1\4 teaspoon cream of tartar
1 large egg
1\2 teaspoon vanilla
1 1\2 cups all purpose flour
4 tablespoons granulated sugar
1 1\2 teaspoons cinnamon

Preheat oven to 375 degrees. In a mixing bowl, beat the butter on medium speed for 30seconds. Add the 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until well blended. Beat in as much flour as you can with the mixer, and stir in remaining flour. Cover with plastic wrap and chill for one hour. Combine the 4 tablespoons granulated sugar and 1 1\2 teaspoons cinnamon in a separate bowl. Shape the dough into 1 inch balls and roll in cinnamon sugar mixture to coat. Place balls of dough 2 inches apart on an ungreased cookie sheet. Bake for 10 to 11 minutes or until edges are beautifully golden. Transfer cookies to a wire rack to cool.

Ultimate Double Chocolate Brownies


This recipe took grand prize in my mom's favourite magazine.

Ingredients:
3\4 cup baking cocoa
1\2 teaspoon baking soda
2\3 cup butter or margarine,melted,divided
1\2 cup boiling water
2 cups sugar
2 eggs
1-1\3 cups all-purpose flour
1 teaspoon vanilla extract
1\4 teaspoon salt
1\2 cup coarsely chopped pecans (optional)
2 cups (12 ounces) semisweet chocolate chunks

In a large bowl, combine cocoa and baking soda; blend in 1\3 cup melted butter. Add boiling water;stir until well blended. Stir in sugar,eggs and remaining butter. Add flour,vanilla and salt. Stir in the pecans and chocolate chunks. Pour into a greased 13-in. by 9-in. baking-pan. Bake at 350 for 35-40 minutes or until brownies begin to pull away from sides of pan. Cool.

Butterscotch Buns

Butterscotch Buns are a variation on cinnamon buns, that don't require rising time!

Igredients:
1\3 cup margarine or butter
3\4 cup packed brown sugar
1\3 cup chopped walnuts
2 cups all-purpose flour
2 tablespoons white sugar
4 teaspoons baking powder
1 teaspoon salt
1\4 cup butter, chilled, or margarine
1 cup milk

1.Cream 1\3 cup butter or margarine and brown sugar together in a small bowl.
2.In large bowl, whisk together flour, white sugar, baking powder, and salt. Cut in 1\4 cup of butter or margarine until crumbly. Make a well in the center, and pour in milk. Stir to make a soft dough.
3.Knead dough 8 to 10 times. Pat or roll out on a lightly floured surface into a large square. Spread with brown sugar mixture that you made in step one. Sprinkle with chopped walnuts. Roll up the dough as you would do for a jelly roll, and pinch edge to seal. Cut into slices (about 12). Place into a greased 8 inch by 8 inch pan.
4.Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes. Invert over tray while hot, and serve.

Monster Cookies

The first time I made these cookies I sent them along with my dad and brother to a hockey game. One lady who tried them said they were the best cookies she'd ever had!


3 eggs
1 cup sugar
1 cup brown sugar
1\2 cup soft margarine
1 tsp. vanilla
1 tsp. light corn syrup
1 1\2 cups peanut butter
2 tsp. baking soda
3 1\2 cups quick oatmeal
1 cup chocolate chips
1 cup M&M's

Measure all ingredients in a large bowl in the order given. Mix thoroughly. Place onto greased cookie sheet. Bake at 350 degrees for 10 to 13 minutes. Don't overbake! These are flat, moist cookies! If you like, add 1 - 2 cups flour. These cookies are great without the flour, though. Instead of adding the M&M's to the dough, you can press them in the top of the cookies before baking.
Yield: About 25 monstrous cookies!

Variation: Spread the cookie dough on a pizza pan and sprinkle M&Ms on top or whatever else you want ( coconut, craisins, peanut butter chips...) to make a cookie pizza!

Favourite Peanut Butter Chocolate Chip Oatmeal Cookies



I have to say that I've never had a cookie that measured up to these! They've got peanut butter, chocolate, and oats in them! Some of my favourite things!

1 cup margarine
1 cup peanut butter
1\2 cup sugar
1 cup brown sugar

Cream together thoroughly
............................................................................

2 eggs
1 tsp. vanilla
2 tbsp. water

Add, beating until fluffy

............................................................................

1 1\2 cups flour
1 tsp. baking soda
1 tsp. salt

Sift together and add

.............................................................................

2 1\2 cups quick oatmeal
3\4 cup chocolate chips

Stir in
.............................................................................

Drop onto ungreased baking sheet. Bake at 350 degrees for 10 to 12 minutes.

Yield: about 6 dozen

Pretzel Cereal Crunch


This recipe is sooo good! It makes a great gift too!

1 1\4 cups Golden Grahams (crushed graham crackers work too)
1 1\4 cups Apple Cinnamon Cheerios
1 1\4 cups pretzels
1 package of white of vanilla chips (10 to 12 ounces)
1\8 of a cup creamy peanut butter
1 1\2 cups peanuts (optional)
1 1\2 cups craisins (optional)
1 cup chopped, toasted pecans (also optional)

In a large bowl, combine the cereals, pretzels, pecans and other items. In a microwave safe bowl, melt chips; Stir until smooth. Stir in peanut butter. Drizzle over cereal mixture and toss to coat. Spread evenly on a wax paper lined baking sheet. Cool completely; break into pieces. Store in an airtight container.
Yield: about nine cups

Grandma's Honey Cookie Recipe


This is a large recipe. It makes about a hundred cookies! I usually half it.

2 cups honey
2 cups rogers syrup
2 cups brown sugar ( A little less is fine )
1 1\2 cups butter or margarine
3 eggs
1 1\2 cups cream
1 tablespoon baking soda
2 teaspoons baking powder
1 1\2 teaspoons star anise ( This is optional )
13 cups flour

For the icing:
milk
vanilla (a tiny bit)
butter
icing sugar

Cream together butter, sugar, eggs, honey and syrup.
Add cream and sifted dry ingredients, but only put in 12 cups flour.
Add the last cup when batter is smooth.
Before you roll them out, it's best to chill the dough for about 30 minutes to an hour. Bake at 350 degrees for about ten minutes. Careful not to let them get dark!
To make the icing, put all the ingredients together and mix. Don't bother measuring! Be creative with the amounts!

Creamsicle Smoothie




1\2 a can frozen orange juice concentrate
1 cup milk
1 cup yogurt
1\4 teaspoon vanilla
1\2 cup sugar (I use honey. If you use sugar, you can half it)
10-15 ice cubes

Place all the ingredients in the blender and blend until smooth.
Pour into cups and enjoy!

Variation: Add a banana to make an orange banana smoothie!
