Recipe Contest Winner! {and some thoughts about the other entries}

First of all, I'd like to thank everyone for their entries. I thoroughly enjoyed sampling all the recipes! I will start with my comments on each recipe...

Nela's recipe for Lemon Crumb Bars:






These were delicious! I love the fact that they have cracker crumbs in them! I also enjoyed pressing the crumbs into the pan. For the judging, I had my extended family over and we all judged together. My cousin gave it 10/10! Thank you for participating in the contest, Nela!


Emily Grace's recipe for Peanut Butter Sandwich Cookies:


This recipe was very good! I ♥ sandwich cookies of all kinds! And with peanut butter?! They were sooo good!! These cookies are excellent with milk! I love the filling and the cookie part is delicious too. Thank you for your entry, Emily Grace! {P.S. I like the picture of the cookies!}




Rose's recipe for Chocolate Meringues:

These cookies were excellent! Out of all the entries, they were my sister's favourite! I love the colour and the flavour that the chocolate chips add. I also liked the texture! Thank you for entering, Rose! I enjoyed your recipe very much.




Gallop Girl's recipe for Deluxe Marshmallow Brownies:





YUMMM!!! These were sooo good! I love the peanut butter/chocolate/rice crispie topping *drools*. And with that scrumptious cookie-like bottom and marshmallow middle? *help! I'm melting!* Thank you for submitting this recipe, Gallop Girl! {This picture really well done!}


And, last but not least, Scezzle's recipe for Ranger Cookies:



What can I say? These were sooo good! They were my dad's favourite out of all the entries. I love the coconut and peanuts in these cookies! Thank you for entering, Scezzle {Oh, by the way, I added chocolate chips to the cookies when I made them}.

And here is her recipe! {A note to anyone who entered: don't be surprised if you check my blog a few days from now and find your recipe posted. I want to share your recipes on my blog too, but I will be doing it over a period of time, probably a week or so}

Deluxe Marshmallow Brownies
Bottom layer:
¾ cup butter or margarine, softened
1 ½ cups sugar
3 eggs
1 teaspoon vanilla extract
1 and 1/3 cups all purpose flour
½ teaspoon baking powder
½ teaspoon salt
3 tablespoons baking cocoa
Optional: 1/2 cup peanuts. Since I have a brother in my family who is allergic to nuts, I don't add the nuts.

Middle layer:
4 cups mini marshmallows

Top layer:
1 and 1/3 cups (8 ounces) chocolate chips
3 tablespoons butter or margarine
1 cup peanut butter
2 cups rice crispy cereal

In mixing bowl, cream butter and sugar. Add eggs and vanilla;beat until fluffy.
Combine flour, baking powder, salt and cocoa; add to creamed mixture.
Spread in a greased 9x13 baking pan. Bake at 350'C for 20-25 minutes.
Now, depending on your oven, you might need to add some more time. I usually do half an hour with our oven. So, start with 20 minutes, and increase the time as you go along :)
When baked, remove from oven and sprinkle the marshmallows evenly over top; return to the oven and bake for about 2-3 minutes more, just enough to melt the marshmallows. If you do too long, you might burn them and that just won't do!
Then, using a knife dipped in water, spread the melted marshmallows evenly over cake. I usually just skip this step because I don't see the point in it, but that's what the recipe says, so if you want to do this step, go right ahead :) P.S it might get a little sticky!!!
Now let it cool. This is very important. Once when I was in a hurry, I did not let it cool completely, and the top layer did not harden. In the end I had to stick it in the freezer to get it to harden. In the long run, it's worth it to wait till it has had time to cool completely.
For top layer, combine chocolate chips, butter, and peanut butter in a small saucepan.
Cook over low heat, stirring constantly until melted and well blended. Remove from heat; stir in rice crispy cereal. Spread over bars. Chill.
Yield: about 3 dozen.

Here's Scezzle's recipe:

Ranger Cookies

Ingredients:
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups all-purpose flour
- 1 cup quick cooking rolled oats
- 1 cup coconut
- 1 cup raisins or dried fruit. We use peanuts instead.

1. In a large mixing bowl beat butter with electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer.
Stir in any remaining flour. Stir in rolled oats, coconut, and raisins or peanuts.

2. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in 375 F oven for about 8 min or until edges are golden. Cool on cookie sheets 1 min. Transfer to a wire rack and let cool.
